Marshmallow Roll

  • Shredded coconut
  • 3 ounces unsweetened chocolate
  • 2 tablespoons butter
  • 1 egg, beaten
  • 2 tablespoons granulated sugar
  • 1 cup powdered sugar
  • 1 package (10 ounces) colored mini marshmallows
  • 1 cup nuts

Sprinkle coconut on a long sheet of wax paper or parchment paper.

Melt the chocolate and butter in a saucepan. In a bowl mix together the melted chocolate, butter and remaining ingredients except the marshmallows.

When mixed, stir in the marshmallows. Let sit until it thickens.

Then spread the mixture into a long roll on top of the coconut. Use the paper to wrap the coconut around the marshmallow mixture. Add more coconut if needed. Wrap in foil and freeze.

Cut into 2 inch thick slices.
