Gulliver’s Creamed Corn

  • 2 20 ounce packages frozen corn
  • 1 cup whipping cream
  • 1 cup milk
  • 6 teaspoons sugar
  • 1 teaspoon salt
  • Pinch of white pepper or cayenne pepper
  • 2 tablespoons melted butter
  • 2 tablespoons flour
  • Grated Parmesan cheese

Heat the broiler.

Combine the corn, cream, milk, sugar, salt, and pepper in a saucepan and bring to a boil. Lower the heat and simmer for 5 minutes. Blend butter with flour and add to the corn. Do not boil. Remove from the heat.

Put in casserole dish, sprinkle with Parmesan cheese and place under broiler until brown.

Serves 8.
