Chocolate Mint Brownies

Bottom layer:

  • 1 cup (2 sticks) unsalted butter
  • 2 ounces unsweetened chocolate
  • 4 eggs
  • 2 cups sugar
  • 1 cup flour
  • Dash of salt

Middle layer:

  • 4 tablespoons soft butter 3 cups powdered sugar
  • 1/4 cup cream or milk
  • 2 teaspoon peppermint extract 1/4 teaspoon green food coloring
  • Top layer:
  • 4 tablespoons butter
  • 4 ounces unsweetened chocolate

Heat the oven to 350 degrees. Grease a 10×15 inch jelly roll pan.

Bottom Layer:

Melt the butter and chocolate together. Let cool.

Beat together the eggs, sugar, flour, chocolate mixture, and salt. Spread into the prepared pan and bake for 20-25 minutes. Let cool.

Middle Layer:

Mix softened butter and powdered sugar together, alternately with cream or milk. Add peppermint extract and food coloring. Spread on cooled brownies. Let stand at least one hour.

Top Layer:

Melt butter and unsweetened chocolate. Cool to lukewarm, then pour over green layer. Let stand until not sticky and then score brownies into bite size pieces.

Refrigerate until completely firm and then cut into bars.
