Blueberry Coffee Cake

Topping:

  • 1/3 cup flour
  • 1/2 cup sugar 1 teaspoon cinnamon
  • 1/4 cup (1/2 stick) cold butter, cut in pieces

Cake:

  • 3/4 cup sugar
  • 1/4 cup (1/2 stick) butter, at room temperature
  • 1 egg
  • 2 cups flour 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 2 cups blueberries

Heat the oven to 350 degrees. Grease an 8×11 inch Pyrex pan or metal pan.

Mix the flour, sugar, cinnamon, and butter together in a food processor, or in a bowl. Set aside for the topping.

Beat the sugar and butter together until smooth. Beat in the egg. Mix the flour, baking powder, and salt together. Add to the mixture, alternating with the milk. Gently fold in the blueberries.

Spread into prepared pan. Sprinkle the topping on top. Bake for 45-50 minutes.
