Pecan Pie

Ingredients

  • 1 pie shell, unbaked
  • 3 tbs. butter
  • 3/4 c. brown sugar, packed
  • 3/4 c. corn syrup, dark
  • 3 eggs
  • 2 tsp. vanilla
  • 1/8 tsp. salt
  • 1 c. pecans, chopped
  • 1 c. pecan halves
  • whipped topping, (or ice cream)

Instructions

Place oven rack in lower third of oven and preheat to 350F. Press pie crust into pie dish as directed for one-crust filled pie. In a large microwave-safe bowl, melt butter. Stir in brown sugar until smooth. Whisk in corn syrup, eggs, vanilla, and salt. Stir in chopped pecans. Pour into pie shell. Arrange pecan halves in circles over the top. Bake for 35 to 40 minutes or until filling is set and pastry is golden brown. Cool at least 2 hours before serving. (Pie may be held covered at room temperature overnight or frozen.) Serve at room temperature with whipped cream or ice cream, if desired.
