- 6 medium (2 1/2 pounds) white potatoes
- 1 large onion
- 1 1/2 teaspoons salt
- 1/4 teaspoon white pepper
- 2 eggs beaten
- 1/4 cup matzo meal
- 1/4 cup canola oil
Heat the oven to 375 degrees. Spray Pam to coat muffin tins.
Peel the potatoes and grate in a food processor with metal blade along with the onion. Add remaining ingredients and mix thoroughly. Pour into muffin tins.
Bake for about 1 hour until tops are browned and crisp.
Serves 6-8.
