- 1 1/2 cups (3 sticks) soft unsalted butter
- 1 cup sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 1/2 teaspoon salt
- 3 1/2 cups flour
- 1 14 ounce package Chocolate Mint Wafers (mint flavored chocolate rounds)
Cream together butter, sugar, eggs, vanilla, and salt. Stir in flour. Chill the dough for about 1 hour.
Heat the oven to 400 degrees.
Line a cookie sheet with parchment paper.
Shape the dough into 1 inch balls. Place 2 inches apart on cookie sheet. Flatten each by pressing a chocolate wafer in center.
Bake for 8-10 minutes.
Remove immediately from pan and cool on rack.
Makes 4 dozen.
