- 3 eggs
- 1 cup oil
- 1 cup sugar
- 1/4 cup lemon or orange juice
- 1 tablespoon baking powder
- Dash of salt
- 3-4 cups flour or more
- 1 teaspoon vanilla extract or almond extract or lemon extract 1 teaspoon orange or lemon zest
- 1 cup almonds
Heat the oven to 350 degrees.
Beat together the eggs, oil, sugar, and juice until smooth. Add everything else.
Divide the dough into 2 pieces. Shape into flat loaves and place on ungreased cookie sheet.
Bake for 20 minutes.
Remove pan from oven and slice each loaf crosswise into 1/2 inch slices. Bake on each side for about 10 minutes, or until lightly brown and firm.
Note: Called kamish bread in Minneapolis, mandelbrot in other places.
