Place oven rack in lowest position. Preheat to 375F.
Heat skillet over medium heat. Sautee until crisp
➜ 3 strips bacon
Remove and drain on paper towels.
In the same pan, reserve
➜ 1 tbsp bacon fat
and cook until wilted
➜ 1 small onion, diced
In
➜ one 9-inch pie crust in pan
crumble bacon, add onion and
➜ 1/2 c cubed Gruyere or Swiss cheese
In a bowl, whisk together
➜ 3 eggs, lightly beaten
➜ 1/2 c heavy cream or half-and-half
➜ 1/2 c milk
➜ 2 tbsp minced parsley
➜ 1/4 tsp nutmeg
➜ 1/4 tsp salt
➜ 1/4 tsp white pepper
Pour egg mixture into pie crust.
Place on baking sheet and bake for 45-50 minutes, until firm.
