Butter the bottom and sides of a 2 1/2 – 3 quart shallow baking dish.
Slice
➜ 8 oz loaf of seedless Italian bread
If needed, dry slices in the oven. Arrange the slices in the baking dish, overlapping edges slightly.
Saute until crisp
➜ 5 slices bacon
Drain on paper towels and crumble when cool.
Sprinkle bacon over the bread slices. Top with
➜ 1 1/2 c grated Gouda, Gruyere, or fontina
➜ 1/2 c spinache or sorrel leaves
In a bowl, mix
➜ 5 eggs, lightly beaten
➜ 2 c milk
➜ 2 tbsp tomato-based salsa
➜ salt and pepper to taste
Pour egg mixture over the bread and let sit 15 minutes.
Preheat oven to 350F. Bake strata for 30 minutes or until set.
