Cilantro Chutney

A super quick recipe full of flavor that can be made right before sitting down to eat.
INGREDIENTS
- 1 cup cilantro leaves, tightly packed
- 1 teaspoon sugar (optional)
- 3/4 cup cold water, plain yogurt, or coconut milk
- 1 small onion, peeled, finely chopped
- 2 Thai or 1 serrano chile or 2 jalapeno chiles, stemmed, seeded, finely chopped
- 2 tablespoons lemon juice
PREPARATION
Within an hour of serving the sauce, puree the cilantro in a blender with the sugar and your choice of liquid for 1 minute on high speed. Stir in the rest of the ingredients.
