- 1/2 cup (1 stick) unsalted butter butter
- 1/2 cup creamy peanut
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 1 egg
- 1/2 teaspoon vanilla extract
- 1 1/2 cups flour
- 3/4 teaspoon baking powder
- 1/4 teaspoon salt Granulated sugar for coating.
Heat the oven to 375 degrees.
Cream butter, peanut butter, sugars, egg, and vanilla. Mix the flour, baking powder and salt. Blend into creamed mixture. Shape into 1 inch balls.
Put granulated sugar in a flat bowl or rimmed plate. Roll each ball of dough in the sugar to coat. Place the balls 2 inches apart on an ungreased cookie sheet. Press down with the tines of a fork to make a crisscross pattern on the top of each cookie.
Bake for 10-12 minutes, or until brown and set. Cool slightly before eating.
Makes about 4 dozen.
