Stuffed Pepper Rice


Cook
1 lb of sausage
Remove from pan and drain on paper towel

Saute in oil
1 onion
1 head of fennel (optional)
Garlic (to taste)

Add & saute
1.5 lbs sweet/bell peppers

Re-add cooked sausage

Add & saute
Dried basil
Dried oregano
Paprika
Salt & pepper
1 can tomato paste

Add & break up
2 cups (measured dry) rice, cooked

Add & mix
28oz can crushed tomatoes

Top with
Grated cheddar cheese

Either cover and cook slowly to melt cheese and form bottom crust; or put pan in oven (~350F) to melt & brown cheese
