Cilantro shrimp with black beans and kale


Ingredients

  • Shrimp (any size)
  • Cumin
  • Black beans, cooked (~1 cup dry)
  • Kale
  • Garlic
  • Onion (opt)
  • Cilantro
  • Olive oil
  1. Cook the beans; season as desired (just salt can be enough with the other parts of the meal)
  2. Sautee the kale with garlic and onion
  3. Season the shrimp (suggested: cumin, garlic powder, salt)
  4. Food process the cilantro with garlic, salt, and olive oil to make a basic cilantro pesto
  5. Cook the shrimp
  6. Assemble with black beans, kale, shrimp, and pesto on top
