Cilantro shrimp with black beans and kale
Ingredients
- Shrimp (any size)
- Cumin
- Black beans, cooked (~1 cup dry)
- Kale
- Garlic
- Onion (opt)
- Cilantro
- Olive oil
- Cook the beans; season as desired (just salt can be enough with the other parts of the meal)
- Sautee the kale with garlic and onion
- Season the shrimp (suggested: cumin, garlic powder, salt)
- Food process the cilantro with garlic, salt, and olive oil to make a basic cilantro pesto
- Cook the shrimp
- Assemble with black beans, kale, shrimp, and pesto on top
